The desert vineyard
From our very first harvest, it was clear this wine would tell a different story — one of genuine desert terroir. We hand-select grapes from the finest vineyards on the plateau east of Mitzpe Ramon, at an average altitude of 800 meters above sea level.
Our grapes come from a frew distinguished vineyards — each tended by growers we’ve partnered with for years. As a farming family for nearly four decades, we know how to spot a quality yield and professional cultivation when we see it.
The vineyards are planted with Malbec, Syrah, Cabernet Franc, Petit Verdot, Marselan, Roussanne, Colombard, Sauvignon Blanc, Chardonnay, Chenin Blanc and more.
The soil is desert loess, rich in minerals that give the grapes their distinctive character. The vines endure extreme temperature swings — between day and night, and between winter and summer — while irrigation is carefully managed to control water use and canopy growth. Together, these conditions are what give the grapes their unmistakable desert character.
Harvesting is done entirely by hand, during the cooler hours of the desert day — close to sunset or in att the break of dawn — after which the grapes are brought straight to our winery in Tzofar. Because we want to make regional wines suited to any weather, but especially to the desert’s intense heat, most of what we produce are middle east styled lighter reds & “cool” wines — rosé and white.
